This summer we’re proud to present a special collab: Sabato x Loutsa Samos
For this week, we join forces with Jesse and Stefanie, the duo behind Sabato. Named after the Italian and Greek word for Saturday, Sabato stands for Mediterranean food that brings people together, classic, comforting and beautifully presented.
Stefanie grew up in Greece and brings generations of family recipes to the table. Jesse lived in Italy, immersing herself in regional traditions and seasonal cooking. Now based in Amsterdam, their style blends Greek and Italian roots with influences from Turkish, Moroccan, Lebanese and Syrian cuisines, always with a love for clean aesthetics and thoughtful presentation.
From their catering studio in Amsterdam, Sabato creates conceptual yet deeply approachable food experiences, specialising in custom catering, private dinners, pop-ups, food styling and recipe development.
During this Greek Island Special at Loutsa Samos, we’ll focus on what truly matters: local products, workshops, food styling sessions, sea days, visits to local makers and the best food all week long.
Think long lunches between olive trees, honey tastings with local beekeepers, foraging mountain herbs, seafood by the coast and shared tables that stretch into the evening. A week shaped by the rhythm of the island, simple, seasonal and generous.

6-day food and nature experience on Samos, shaped by Mediterranean flavours and island life.
DAY 1 – Arrival & welcome dinner
Pick up at the airport
Arrival at Loutsa including a little tour on our land
Slow sunset walk around the village
Welcome dinner in the olive grove by Sabato & Loutsa Samos
DAY 2 – Theme: Herbs & Honey
Slow breakfast in the garden
Local visit: morning visit to Panos the beekeeper for a honey tasting and introduction to the local flora and biodiversity of Samos
Lunch on the beach & siesta time
Local visit: afternoon visit to Metaxa Liknon for a private tasting of local botanicals and spirits
Dinner: in the olive grove by Sabato & Loutsa Samos
DAY 3 – Theme: Traditional villages
Breakfast and preps for hike
Morning hike to artistic Manolates mountain village
Lunch at the best beach taverna @ Agios Konstantinos
Siesta / beach time
Afternoon workshop: rolling dolma together, learning local recipes and traditions
Dinner: in the olive grove by Sabato & Loutsa Samos
DAY 4 – Theme: Sea & Slowdown
Slow breakfast in the garden
Beach day with swims in clear blue water and time to fully unwind
Lunch: picnic mezze XXL by the sea

DAY 5 – Theme: Land & Table

Morning workshop: food styling inspired by landscape, light and seasonal ingredients

Siesta time / afternoon swim / slow stroll through the mountain village

Accommodation & what’s included
Loutsa Samos is located within walking distance of the authentic mountain village of Vourliotes, where you’ll find small cafés, local tavernas and everyday village life.
You’ll stay between olive trees, mountain views and the sea in a spacious bell tent on the land at Loutsa Samos. Expect simple, comfortable island living, with shared outdoor showers and plenty of space to slow down and settle in.
Accommodation Options
Solo Bell tent (private use)
A large bell tent all to yourself, with a comfortable double bed and plenty of space. Ideal if you’re looking for a quiet, personal stay close to nature.
Shared Bell tent (duo use)
Share a bell tent with a partner or friend. Choosing a shared tent offers a more accessible price and helps us keep the group small, personal and connected.
Village studio (upgrade option)
A private studio in Vourliotes with your own bathroom. Perfect if you prefer extra comfort, privacy and a bit of village life.
